Gourmet Potatoes

Total Time: 25 hours, 30 minutes

Adjust quantity of potatoes to fit your serving size

Ingredients

12 medium potatoes
8 ounces cream cheese
1 small sour cream
1/2 cup butter
1 small chopped onion or chives
salt and pepper to taste

Instructions

  1. Boil potatoes with skins until tender.
  2. Peel and whip.
  3. Add sour cream and softened cream cheese.
  4. Add chopped onions or chives, salt and pepper.
  5. Place in buttered casserole over night.
  6. When ready to bake, dot with butter and sprinkle paprika.
  7. Bake at 350 degrees for 50 to 60 minutes.

Wine Baked Salmon

Wine Baked Salmon

Prep Time: 15 minutes

Cook Time: 22 minutes

Total Time: 37 minutes

Ingredients

2 salmon fillets
2 carrots
2 ribs of celery
1 onion
3/4 teaspoon fresh dill
2 cups white wine
butter
salt and pepper
juice of 1 lemon

Instructions

  1. Dice vegetables and chop dill.
  2. Cook in butter on low heat for 10 minutes. Remove from heat.
  3. Add wine. Add juice from one lemon. Stir.
  4. Place fish in buttered baking dish. Spoon wine and vegetables over fish.
  5. Bake at 350 degrees for 10 to 12 minutes.

2 eggs, beaten
1/2 cup flour
1/2 cup milk
1/2 teaspoon nutmeg
Pinch of salt
4 tablespoons butter

Instructions

  1. Melt butter in 9″ cast iron frypan in oven.
  2. Mix beaten eggs and milk; add remaining ingredients.
  3. Pour into pan.
  4. Bake at 400 degrees for 20 minutes.
