  PINEAPPLE UPSIDE DOWN CAKE

  1/2 cup butter
1 cup brown sugar
1 can sliced pineapple
1 tablespoon chopped pecans or raisins
3 eggs separated
1 cup sugar
5 tablespoons pineapple juice
1 cup flour
1 teaspoon baking powder
pinch of salt
  Instructions
  Melt butter in skillet and spread brown sugar over it. Arrange slices of pineapple on brown sugar. Drop raisins or pecans in open spaces. Cover with batter made up of rest of ingredients as follows: beat egg yolks, add sugar and pineapple juice, sift together flour, baking powder and salt, then fold in egg whites. Bake 40 minutes at 350 degrees. Turn on to serving platter upside down.
