Cook unpeeled sweet potatoes in boiling water for 30 minutes or until tender. Drain and chill under cold water. Peel and mash potatoes. Add eggs, milk, sugar, butter, rind, salt, nutmeg and cinnamon. Mix until light and fluffy. Place in a buttered 13x9 baking dish and sprinkle brown sugar and additional cinnamon on top. Bake at 400 degrees for 30 minutes. |
