  3 pounds sweet potatoes
2 eggs beaten
2 cups light cream
1/2 cup sugar
1/4 cup melted butter
3 tablespoons grated orange rind
2 tablespoons fresh orange juice
1-1/2 teaspoon salt
1 teaspoon ground nutmeg
1/2 teaspoon cinnamon plus additional cinnamon for topping
3 tablespoons brown sugar
  Instructions
  Cook unpeeled sweet potatoes in boiling water for 30 minutes or until tender. Drain and chill under cold water. Peel and mash potatoes. Add eggs, milk, sugar, butter, rind, salt, nutmeg and cinnamon. Mix until light and fluffy. Place in a buttered 13x9 baking dish and sprinkle brown sugar and additional cinnamon on top. Bake at 400 degrees for 30 minutes.
